Kothavarai Vathal is a sun-dried form of Cluster Beans/dried cluster beans (Guar Phali in Hindi) made by boiling this highly nutritious vegetable in salted water for a few minutes, dry them in a cloth towel overnight, mixing them with Buttermilk, pinch of turmeric powder, and chilli powder the next day morning and sundry for 4-5 days or until it is completely dehydrated.
